Ingredients: 1/2 lb carrots (shredded (3 cups), 1lb = 8 carrots); 1 2/3 cup granulated sugar; 1/3 cup canola oil (minus one tablespoon); 1/4 cup applesauce; 3 tablespoons flax seeds; 2 teaspoons pure vanilla extract; 4 large egg; 3 cups all-purpose flour; 2 teaspoons baking powder; 1/2 teaspoon baking soda; 1 teaspoon cinnamon; 1/2 teaspoon ground cloves; 1/4 teaspoon ground nutmeg
