Ingredients: 1 head cauliflower (cut into florets); 16 oz shiitake mushrooms (cut into bite-sized pieces); ¼ cup olive oil; 1 tablespoon cumin seeds; 2½ teaspoons Kosher salt; 2 teaspoons chipotle powder (dried chile powder, not chili powder); 2 teaspoons onion powder; 1 teaspoon light brown sugar; 1 lime (for juice); 18 small corn tortillas (not needed until day of cooking)
