Ingredients: 2 lb boneless skinless chicken breasts (you can substitute chicken thighs but that will change the nutritional info); 1/4 cup balsamic vinegar; 4 oz chicken broth (8oz = 1 cup); 3 cloves garlic (minced); 1/2 teaspoon black pepper; 1 1/2 lb sweet potatoes (peeled and cubed); 1 bunch kale (rinsed and chopped); 1 lb carrots (peeled and chopped, 1lb = 8 carrots); 4 slice bacon (chopped )
