Ingredients: 1 2-lb beef chuck shoulder roast (fat-trimmed and cut into bite-sized pieces); 1/2 lb carrots (peeled and chopped, 1lb = 8 carrots); 2 rib celery (chopped); 1/2 yellow onion (chopped); 2 teaspoon dried thyme; 1 teaspoon dried rosemary; 1 bay leaf; 1/2 teaspoon salt; 1/4 teaspoon black pepper; 1/2 cup pearled barley; 56 oz beef broth (not needed until day of cooking) (8oz = 1 cup)
